Tonight’s Dinner I will be serving one of my favorite meals.
It’s easy and delicious, and not very expensive and a great crock pot meal.
Pork Mojo – (Recipe below)
White Rice
Black Beans
Small pork shoulder roast around 2.5 to 3 lbs.
I would love to say that I am a super wife, and I made my mojo fresh but I didn’t. I bought the Mojo marinate from the
supermarket, mainly after determining that the prices of oranges was mad. I like to plan my meals around two things, health and then budget.
Homemade Mojo Marinate ~
2 cups of pulp free orange juice (or fresh squeezed)
2 limes squeezed
4 cloves of garlic or about 1/2 a head
1/2 to 1 small onion (I use a whole, but I love onion)
1 tsp of oregano
10 sprigs cilantro
1/2 tsp of ground cumin
1 1/2 tbsp olive oil
salt and pepper to taste
Put this all in a blender or food processor and chop, then divide in half. Half will be used to marinate the meat for several hours and the other half will go into your crock pot with the meat while it’s cooking. It’s pretty easy and after you’ve made it a couple of times you’ll learn to adjust the recipe to your families taste. Some actually use almost equal amounts of orange and lime juice, while others add a dash of cinnamon. There are many recipes out there, this one comes from the kitchen of an awesome Cuban friend.
Either using 1/2 of your home-made mojo or store-bought, marinate the pork over night. I don’t buy Ziploc bags, because I have one of those fresh seal things. So I marinate the pork over night in my pork “only” container. (I know call me weird, but I have 2 different marinate containers, one for my pork and one for any beef)
Put your pork into the crock pot, add remaining mojo and about 1/2 to 1 cup of water. Cover and turn on your crock pot, I like to start my roast mid morning on high, then after lunch I turn down to med/low. If you’re cooking this while you’re at work (8 hours) then med temp will be good.
Serve with White rice and Black Beans.
